Low carb, low fat, low cal cheese cake

Recipe Ingredients for Low carb ricotta cheese cake

2 cups part-skim ricotta cheese
4 tbsp sugar
1 tbsp corn starch
1 egg
2 egg whites
2 tbsp lemon juice
1 tsp vanilla flavoring

Recipe Directions for Low carb ricotta cheese cake

  1. Preheat oven to 325 degrees. Lightly grease a 7 inch springform or 8 inch pie plate.

  2. Combine Ricotta cheese, sugar, cornstarch, lemon juice and vanilla, mixing gently with fork or wire wisk until well blended. Stir in eggs.

  3. Pour into pan and smooth top. Bake until the center is set, 20 to 25 minutes in the pie plate or 55 minutes in the springform pan. Cool and refridgerate uncovered for 24 hours.
