Modified Atkins Diet for Seizures

Recipe Ingredients for Low Carb Pumpkin Muffins

6 eggs
1/2 cup butter (melted)
1 cup Pumpkin puree
4 oz Traditional Plain Greek Yogurt
2 dashes cinnamon
1 tsp pure vanilla extract
1/2 tsp. baking soda
1.5 tsp baking powder
1 cup Hazelnut Meal/Flour
1/3 cup Organic Coconut Flour
1/3 cup water

Recipe Directions for Low Carb Pumpkin Muffins

  1. Beat eggs well. Add butter, pumpkin, yogurt, cinnamon, vanilla. Add no calorie/no cab sweetener to taste (a few drops of Stevia is enough).

  2. Sift together baking soda, powder and nut flours.

  3. Let stand for coconut flour to absorb liquids.

  4. Add water for appropriate consistency.

  5. Ladle into lined muffin tins and bake at 350, ~ 20-30 min?

  6. Next time, replace with Traditional Greek Yogurt (and update recipe).
