Recipe Ingredients for Low Carb Pumpkin Muffins

1 stick butter
3 eggs
1/4 cup soy milk
1/2 cup splenda
1 tablespoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon baking powder
1 teaspoon baking soda
1 cup ground flax seed
1/4 cup soy flour
1 cup canned pumpkin

Recipe Directions for Low Carb Pumpkin Muffins

  1. Mix wet ingredients, pumpkin, butter in one bowl--set aside

  2. Mix dry ingredients in separate bowl

  3. Add dry ingredients to butter and egg mixture

  4. Add batter to muffin tins

  5. Bake at 375 for 15 to 20 minutes

  6. Top with cinnamon/sugar substitute blend
