Recipe Ingredients for low-carb muffins

1 cup soy flour
1 cup oat flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter, melted
1/4 cup applesauce
2 eggs
2/3 cup water
1/3 cup splenda no calorie
1 cup rolled oats
1 cup walnuts
1 cup dried cranberries

Recipe Directions for low-carb muffins

  1. Preheat oven to 350 F.

  2. Butter a muffin tin.

  3. Mix dry ingredients together well.

  4. Add wet ingredients and mix thoroughly

  5. Put in muffin tins (about 1/2 to 2/3 full) and bake for about 15 minutes.
