You'll need 12 1 3/4" fluted paper cups and a 12 cup mini tin to make these great little low carb cheesecakes

Recipe Ingredients for Low Carb Mini Lemon Cheese Cakes

1 graham cracker
1 large egg
1/4 cup splenda
1/4 tsp vanilla extract
8 oz Low Fat Cream Cheese
1 tbsp Lemon Juice

Recipe Directions for Low Carb Mini Lemon Cheese Cakes

  1. Preheat oven to 350

  2. Place the paper cups in the muffin tin and distribute the crushed graham cracker among the cups.

  3. Beat egg, sugar, and vanilla together well with a whisk and then incorporate the cheese.

  4. Spoon the mixture into cups.

  5. Back for 15 minutes or until the edges are set and center is still moist.

  6. Remove cheesecakes from muffin tin and let cool.

  7. Refrigerate for at least an hour before serving
