Lower carbohydrate meatloaf. No bread, breadcrumbs, crackers, or oatmeal included. Includes extra nutrients from spinach, black beans, green chiles, and red peppers. The spinach and black beans are pureed in so little ones won't object to the color!

Recipe Ingredients for Low Carb Meatloaf

3 pounds 85/15 ground beef
7 oz black beans
1 1/2 cups fresh spinach
8 oz Tomato sauce
2 eggs
2 oz chopped red peppers
3 oz green chiles
1/2 cup chopped onion
2 tbsp Worchestershire sauce
1/4 tsp ground sage
1/2 tsp salt
1 tsp ground mustard
1/2 tsp pepper
2 cloves garlic
8 oz Tomato Catsup

Recipe Directions for Low Carb Meatloaf

Blend spinach, tomato sauce, and beans in a blender. (Just a warning, it will look like grinch vomit.) Mix with the rest of the ingredients in a large bowl. Pat into a 13 x 9" cake pan/casserole. Bake at 350 for 1 hours or until inside temp reaches 160.
