Thickening the stock with an egg yolk instead of a roux removes the flour but keeps it rich.

Recipe Ingredients for Low Carb/Gluten Free Sauce for Chicken or Veg

1 cup low sodium chicken broth
2 tbsp white wine vinegar
1 egg yolk

Recipe Directions for Low Carb/Gluten Free Sauce for Chicken or Veg

  1. Whisk the egg yolk in small bowl until thick and sticky.

  2. Heat the stock and vinegar in a sauce pan (note, could deglaze a pan with broth and vinegar in this step)

  3. While vigorously whisking, add spoonfuls of hot stock to the egg. Once the mixture is runny and pale, add it back to the stock and vinegar mixture in a slow stream while whisking. Continue to whisk until sauce is thickened.

  4. Serve over chicken and vegetables.

  5. Note, replace 1/3 of total liquid with lemon juice and add capers for low carb Picatta sauce.
