Low Carb Crepes ready for desert or meal crepes

Recipe Ingredients for Low Carb Crepes

1 whole egg
1 egg white
1/4 cup ricotta cheese, low-fat
2 tablespoons flour, whole wheat
2 servings half and half
1 pinch salt

Recipe Directions for Low Carb Crepes

  1. whisk together the eggs and ricotta cheese

  2. add flour, half and half and salt

  3. whisk until batter is smooth

  4. allow batter to sit for 10 minutes

  5. heat 8 inch non-stick pan to medium heat

  6. add 2 tablespoons crepe batter to pan and twirl pan to coat bottom

  7. allow to cook until edges of crepe starts to lift and is light brown. Top will be dry.

  8. Lift with spatula to plate

  9. continue until batter is gone

  10. For Desert crepes add 1 teaspoon vanilla and 2 packets of splenda to batter, fill with low carb yogurt, strawberries and a squirt of light whipped cream.
