Recipe Ingredients for Low carb coffeecake

4 serving (365) Whey Protein Powder, Vanilla
3 serving (NOW) Almond Flour
1 1/2 tsp Baking Soda
1 tsp Baking Powder
1/4 tsp Salt, Table
6 tbsp Butter
48 tsp SPLENDA No Calorie
1 tsp Vanilla Extract
8 serving Sour Cream

Recipe Directions for Low carb coffeecake

  1. Preheat oven to 350'F. Lightly coat 9" baking pan with nonstick vegetable spray. Set aside.

  2. Combine protein powder, almond flour, baking soda, baking powder, and salt in a medium bowl with a wire whisk.

  3. Place butter in mixing bowl and beat at medium-high speed until light and fluffy.

  4. Add eggs one at a time, beating well each time and scraping the sides of the bowl with rubber spatula as necessary. Add 1 cup of Splenda and beat for 3 minutes. Add vanilla and blend.

  5. On medium low speed, alternate adding the dry mix and sour cream, starting and ending with the dry ingredients. Beat until just blended, scraping down the sides of the bowl.

  6. Spread in prepared baking pan and bake for 25 minutes or until toothpick inserted in the middle comes out clean. Remove from oven and cool completely. Store in airtight container and refrigerate leftover.
