I altered my mom's cabbage roll recipe substituting pine nuts for the rice.

Recipe Ingredients for Low Carb Cabbage Rolls

8 ounces lean ground beef
12 ounces ground pork
8 ounces italian sausage
1 egg
1/4 cup pine nuts
12 cabbage leaves
20 ounces tomato sauce
1 tsp olive oil
1/4 cup diced onions
1/8 cup shallots
1/2 cup mushrooms
1/8 cup parmesan cheese

Recipe Directions for Low Carb Cabbage Rolls

  1. A couple of things that are not in the recipe...I used Classico Four Cheese Tomato Sauce instead of tomato sauce. The difference is +12 calories per serving and I also used 1/4 cup Matzo meal in the meat mixture. This adds 15 calories and 2 grams of carbs to each serving.

  2. Sautee the diced onions, shallots and mushrooms in olive oil and set aside to cool.

  3. Mix meat, egg, pine nuts, matzo meal and sauteed mixture. Add salt, pepper.

  4. Boil cabbage leaves for 3 minutes and then fill each one with enough meat mixture to allow you to wrap up in the cabbage leaf. Put side by side into an ungreased glass pan. Pour tomato sauce over when done.

  5. Cover with tinfoil and cook at 375 for 1.25 hours.

  6. Serve with parmesan cheese.
