Recipe Ingredients for Low Carb Brownies

1/2 cup ground almonds
1/2 cup Soy Flour
1/2 cup all purpose flour
1 cup brown sugar
6 tablespoons oil
1/8 teaspoon cream of tartar
1 teaspoon vanilla extract
5 eggs, separated
2 tbsp. sugar
2 teaspoons baking powder
5 tablespoons cocoa

Recipe Directions for Low Carb Brownies

  1. Run all flours through a food processor with steel blade to lighten and combine.

  2. Preheat oven to 350oF.

  3. Separate eggs, reserve yolks. In a medium sized bowl of electric mixer, whip the 5 egg whites with cream of tartar until stiff, add 2 tbsp. splenda blend in well.

  4. In a separate mixing bowl beat oil and egg yolks on high speed, until light yellow and fluffy. Add vanilla extract and splenda. Beat until well combined.

  5. Add about 1/3 of the whipped egg whites to the oil/egg yolk mixture and mix lightly. Fold in the remaining egg yolks, splenda and butter to the whites and fold carefully.

  6. Add 1 cup of the flour and fold lightly. Stir together the remaining flours, baking powder and cocoa. Fold these into the batter, being careful not to break down the egg whites.

  7. Fill paper lined muffin cups about half full.

  8. Bake at 350oF about 15 to 20 minutes, until cracked on top.

  9. ICING! Yes, you can ice these too, using Splenda and cream!

  10. Chocolate Icing:

  11. 4 oz. cream cheese

  12. 1/2 cup heavy cream

  13. 1/4 cup splenda

  14. Whip cream cheese with electric mixer until smooth. Blend in cream add Splenda and beat for 1 minute.

  15. This "icing" will keep well in the refrigerator and can be frozen.
