Dessert using soy flour instead of rice flour

Recipe Ingredients for Low Carb Bibingka

1 cup Soy Flour
2 large Egg, White
3 tsp Baking Powder
1 cup Coconut Milk
4 oz No Calorie Sweetener
2 tbsp Omega Plus Buttery Spread
2 oz Fat Free Cheddar

Recipe Directions for Low Carb Bibingka

  1. Preheat oven to 375F.

  2. Combine soy flour, salt and baking powder. Set aside.

  3. Whisk eggs, sugar and butter. Add flour mixture and coconut milk. Continue whisking until well combined.

  4. Line 2 round pan (5 inch) with banana leaves. Divide and pour mixture into the two pans. Bake for 15 minutes.

  5. After 15 minutes, remove from oven and add salted egg slices and cheese on top. Return to oven and bake for another 10 minutes or until top is lightly brown.

  6. Serve warm with brushed butter
