Recipe Ingredients for Low Carb BBQ Chicken Cauliflower Pizza

1 c. chopped cauliflower
1 egg
1 1/4 c. part-skim mozzarella cheese
4 oz. grilled chicken breast
4 tbsp. barbecue sauce
3 tbsp red onion
2 tbsp. cilantro

Recipe Directions for Low Carb BBQ Chicken Cauliflower Pizza

  1. For Crust:

  2. 1 cup cooked, riced cauliflower*

  3. 1 egg

  4. .75 cup mozzarella cheese

  5. Preheat oven to 450 degrees Farenheit.

  6. Spray a cookie sheet with non-stick spray.

  7. In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan.

  8. Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).

  9. Remove the pan from the oven. To the crust, add bbq sauce, then toppings and the rest of the cheese.

  10. Place under a broiler at high heat just until cheese is melted.
