10 tbsp Organic Coconut Flour

Recipe Directions for Low Carb Banana Muffins

Beat eggs with splenda until fluffy, about 2-3 minutes. Beat in vanilla. Add eggs one at a time, beating for 30 seconds after each addition. Combine coconut flour with baking powder, cinnamon, and salt and beat until no lumps. Beat in banana. Fold in nuts, reserving some for sprinkling on top. Pour batter into muffin pans and bake 30-35 minutes. Cool in pan for 5-10 minutes, then on rack. Store in airtight container in refrigerator.
