Relatively low in sugar. You could use agave nectar instead of the sugar.

Recipe Ingredients for Low-carb Banana Bread

2 medium bananas, ripened
2 packets sweetener (use Stevia)
1 egg
2 egg whites
1/4 cup unsweetened applesauce
2 tbsp. butter
2 1/4 tsp baking powder
1/3 cup sugar
3/4 cup whole wheat flour
3/4 cup white flour
1/4 tsp lemon rind
1/4 cup wheat germ
1/4 tsp cinnamon
1/4 tsp salt

Recipe Directions for Low-carb Banana Bread

  1. Preheat oven to 350F

  2. Grease and flour the inside of a standard loaf pan

  3. Sift together salt, cinnamon, baking powder, wheat germ and flours.

  4. In a separate bowl, blend the butter, stevia, sugar, applesauce and lemon rind.

  5. To the wet ingredients, add beaten eggs and mashed bananas. Blend.

  6. Add wet ingredients to dry until just blended. Immediately add to loaf pan, spread out evenly.

  7. Bake for 1 hour at 350F or until a toothpick comes clean. Let rest 5 mins before placing on a cooling rack.

  8. Makes 10 slices.
