The healthiest brownie you'll ever eat!

Recipe Ingredients for Low Calorie Zucchini Brownies

2 1/2 cups zucchini, grated
1/2 cup ripe banana (about 1 medium, if I don't have enough I add applesauce)
1 tsp. water
2 tsp. vanilla
2 cups flour (I use 1 cup whole wheat, 1 cup unbleached white)
1 1/2 tsp. baking soda
1/2 tsp. salt
1/3 cup chocolate chips, semi-sweet

Recipe Directions for Low Calorie Zucchini Brownies

  1. Mix the zucchini, banana, water & vanilla in a large bowl. Mix the rest of the ingredients separately in another bowl.

  2. Fold dry ingredients into wet, batter will be stiff.

  3. Bake in nonstick oblong brownie pan 7x13 at 350F, 25-35 minutes til toothpick comes out clean (mine is always done in 25 minutes but I have a heavy pan that cooks fast).
