instead of sugar I used whey low: (tastes exactly like regular sugar, just more of a powdered texture~~> http://www.wheylow.com/ instead of 2 whole eggs I used 1/2 cup "Better N' eggs regular I used NON FAT evaporated milk, instead of regular. and for the pie crust I used whole wheat flour instead of regular white flour!

Recipe Ingredients for Low calorie version of pumkin pie!

1 cup whole wheat flour
1 tsp salt
1/3 cup shortening
4 tablespoons ice water
15 oz pumpkin
12 oz non fat evaporated milk
1 tablespoon pumpkin spice
1/2 cup egg substitute
1/4 cup sugar (actually WHEY LOW 1 cup, which is the equivalent of 1/4 cup sugar in carbohydrates and calories!)

Recipe Directions for Low calorie version of pumkin pie!

  1. Preheat oven to 425F

  2. Pie Crust

  3. 1 cup whole wheat flour

  4. 1/2 tsp salt

  5. 1/3 cup shortening

  6. 4 tablespoons of ice cold water

  7. put all ingredients in a bowl and cut together with a butter knife or mix well (don't be afraid to use your hands!) Leave in bowl in refrigerator for 1/2 hour.

  8. Pie filling:

  9. 1 15 oz can 100% pumpkin (no added spices)

  10. 1 12oz can non fat evaporated milk

  11. 1 cup Whey Low (or if your brave just use the 1/4 cup sugar OR if you want to use splenda, the calories could be lower)

  12. 1 tablespoon pumpkin spice

  13. Mix these ingredients in medium bowl while waiting for pie crust to refrigerate.

  14. When crust is ready roll out to fit 9'' pie tin (might even fit larger one..I seem to get extra). Fill pie shell in tin with pie filling (not too full!) and let bake 15 minutes on 425F, after, reduce heat to 325F and let cook for 45-50 minutes or until toothpick comes out of center of pie clean.
