1 cup Egg beaters
10 ounce frozen chopped spinach
3/4 cup mozarella, part skim
1/4 cup green peppers, chopped
1/4 cup onions, chopped

Recipe Directions for Low Calorie Veggie Quiche Cups

Thaw the spinach and queeze out excess water. Mix all ingredients together. Fill 12 lightly sprayed muffin tins with mixture and bake at 350 for 15 - 18 minutes or until just set. Serving size is two "muffins".
