This pudding can be eaten chilled, but we really prefer it warm. Allow it to sit about 20 minutes after cooking, and then enjoy a warm bowl of pudding with little guilt.

Recipe Ingredients for Low Calorie Tapioca

3 cups skim milk
1/4 cup sugar
3 tbsp tapioca (minute)
1 egg, beaten
1/2 tsp vanilla extract
1 dash of nutmeg

Recipe Directions for Low Calorie Tapioca

  1. In a small saucepan, whisk together the milk, sugar, tapioca, and egg. Allow to sit for 5 minutes. Add a pinch of nutmeg.

  2. Bring the pudding to a boil, stirring constantly with a whisk. Once the pudding has reached a boil, remove from the heat, and allow to cool for 15-20 minutes. Pudding may then be eaten warm, or refrigerate immediately.
