This soup is an extremely low-calorie alternative to snacking. It is not meant to be a full meal as they are half servings, which is why the calories are so low.

Recipe Ingredients for Low-calorie snacking soup

1 cup chopped cabbage
1 cup chopped zucchini
1 cup chopped potato
1 cup chopped carrots
1 cup chopped onion
3 cups water
1/4 cup beer
4 cloves garlic
2 vegetable stock cubes

Recipe Directions for Low-calorie snacking soup

  1. Sauté onion and garlic in beer over low-medium heat until beer has evaporated.

  2. Add all ingredients together (along with any desired spices) and bring to boil.

  3. Cover and simmer over low heat for 30 minutes.

  4. Remove from heat and purée with hand blender.
