These are dense and sweet muffins. They are high in fiber and protein and super low cal. These are in no means light and fluffy, they are dense and chewy. But they are the perfect sweet pick me up in the middle of the day or for breakfast. Spread a little peanut butter on them and you are good to go!

Recipe Ingredients for Low Calorie Protein Carrot Muffins

1 cup skim milk
1/4 cup whole milk
1 egg
1/2 cup unsweetened apple sauce
1 cup carrots, grated
1/2 cup TVP
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground ginger
1 tsp ground cloves
3 tsp baking powder
1/2 tsp salt
1/4 cup brown sugar
1 3/4 cup whole wheat flour

Recipe Directions for Low Calorie Protein Carrot Muffins

  1. Preheat the oven to 375 and line 12-15 muffin tins.

  2. Mix together the TVP, milk and applesauce. Microwave on high for one minute and stir again. Let sit while you grate the carrots. Mix together carrots, milk mixture, and egg. Mix your dry ingredients in a large bowl and whisk until well blended. Make a well in the middle of the dry ingredients and pour wet ingredients in. If too thick, add a little more milk. Mix the batter with as few mixes as possible, lumps of flour are okay. You can fill the muffin tins to the top- these don't rise much. Bake until tester comes out clean- about 20-22 min.
