A filling, protein-rich, fiber-rich, low fat, low calorie Korean style soup. Entire recipe yields 19 1-cup servings. 1-cup of this soup is about 223 grams. Each serving is approximately 81 calories! Add sugar/sweetener to taste- sometimes the squash will be sweet to begin with.

Recipe Ingredients for Low-Calorie Korean Squash Soup (Hobak Juk)

5 cups Water
2 1/2 lb Butternut squash
2 1/2 lb Kabocha
1 1/2 cup canned black beans, drained and washed
1 1/2 cup canned great northern beans, drained and washed

Recipe Directions for Low-Calorie Korean Squash Soup (Hobak Juk)

  1. Seed and section the butternut squash and kabocha squash into 1-2" pieces.

  2. In a large pot, boil water and pieces of squash on high heat for approximately 30 minutes, or until tender.

  3. Using a slotted spoon, mash the pieces of squash into chunks to give the soup a thick, slightly chunky consistency.

  4. Allow soup to boil and thicken for 10 minutes, stirring occasionally.

  5. Add washed and drained beans to the soup, stir.

  6. Boil for additional 10-15 minutes to thicken, add additional water too attain desired consistency.

  7. Add sugar or artificial sweetener if the squash are not sweet enough to begin with.

  8. Serve.
