Quick and easy crepes to serve with fruit Adapted from Cangel's wonderful recipe.

Recipe Ingredients for Low calorie fruit crepes

2 egg whites
1/2 tablespoon oil
1 cup vanilla soy milk
1/2 teaspoon vanilla extract
1 teaspoon oil

Recipe Directions for Low calorie fruit crepes

  1. (Adjust soy milk calories as needed since analysis choose a version that was 70 calories per cup and the brand I use is 90 calories per cup.)

  2. To prepare: Mix all ingredients. Spray oil onto griddle (1 teaspoon estimated amount for cooking). Cook 1/4 cup at a time, cooking first side and then flipping.

  3. Makes 6 crepes, three per person

  4. Cook desired fruit into compote for sauce, sweetening with stevia. Spread sauce on crepes and roll. Drizzle remaining fruit sauce over top. Analysis does not include fruit sauce, since calories will vary by fruit.
