These crepes are reminiscent of the original French, just much lower in fat and calories! You may substitute the wheat flour with white if you don't like the texture, and the soymilk can be substituted with almond milk or skim milk, etc. They have a chewy, delicious texture and make an excellent breakfast, lunch or dinner.

Recipe Ingredients for Low calorie French-style Crepes

1/2 cup wholewheat flour
1/2 cup fat free soymilk
1/4 tsp salt
1 tbsp margarine
3/4 cup water
2 egg whites

Recipe Directions for Low calorie French-style Crepes

In medium sized bowl, sift flour and add salt. Mix. Melt margarine, and add. Next add soymilk, water and egg whites. Blend on highest setting, (which is "liquefy" on most models) for approximately 20 seconds. Grease frying pan with low-calorie cooking spray, and spoon 1/4 cup of mixture evenly throughout the pan. (This makes 8 servings because I use a 10 inch diameter pan. Therefore, I use a 1/4 cup serving in order to evenly coat the pan; if you are using a smaller pan, use less batter.) Cook on medium heat for about one minute, very gently use spatula to flip crepe over. Cook for 15 seconds, and remove. Repeat process. Grease pan every 4 crepes. Fill with desired topping, roll and enjoy!
