(Makes 4 servings) The calories and weight watchers points for the complete recipe depend on what noodles you use. The sauce itself using fat free cheese and low fat sour cream comes out to 130 calories and 8 grams of fat, so 3 weight watchers points. If you'd like to make a lower fat version, you can always substitute fat free sour cream instead of low fat sour cream, or use a tablespoon less of butter. If you combine the low calorie alfredo sauce with the quinoa pasta, you end up with a 335 calorie meal, or 6 weight watchers points. If you combine it instead with the wildwood noodles, the meal will be 180 calories (4 weight watchers points), and it will be 320 calories (or 6 weight watchers points) with the whole wheat noodles.

4 tbsp Promise Fat-Free Buttery Spread
2 oz Sour Cream Fat Free
0.5 cup Fat Free Cheese
2 tsp Parsley, Dried
1 dash Pepper, Black
16 oz Italian Classics Fettuccine

Recipe Directions for Low Calorie Fettuccine Alfredo

  1. Ingredients:

  2. 1 box (or 4 servings) of fettuccine or linguine noodles (I most recently used the quinoa supergrain pasta, but you can also use wildwood pasta slim, whole wheat pasta, or your own noodle of choice)

  3. 1/4 cup of Promise Light

  4. 3/4 cup Low Fat Sour Cream

  5. 1/2 cup grated low fat or fat free cheese of your choice (I use Lifetime Fat Free Mozzarella to save calories, but parmesan cheese probably tastes most authentic)

  6. chopped parsley to taste (1-3 tablespoons)

  7. pepper to taste

  8. Cooking Instructions:

  9. Prepare your pasta based on package instructions

  10. In a separate saucepan, melt your butter

  11. Once your buttery spread is melted, remove it from the burner

  12. Stir in the low fat sour cream, until the sour cream and butter are thoroughly mixed

  13. Add the fat free cheese or parmesan and combine

  14. Pour the sauce over the pasta and stir to combine

  15. Sprinkle parsley and pepper over pasta to taste

  16. Divide into four servings
