Easy to make, pretty darn tasty and VERY filling. Fair warning.

Recipe Ingredients for Low Calorie Chicken Pot Pie

2 half chicken breasts, boned/skinless
1 1/2 cups mixed vegetables, frozen
1 onion, chopped
2 T canola oil
1 can Cream of mushroom soup
1 cup non fat milk
16 oz cauliflower
1/2 cup chicken broth
1 cup sugar snap peas
2 cups broccoli
0.33 cups instant mashed potato flakes
1 cup Bisquick Original
1 cup non fat milk

Recipe Directions for Low Calorie Chicken Pot Pie

  1. Preheat oven to 400 degrees.

  2. Bake the chicken breasts, sprinkled with a garlic herb spice, in a tin foil packet in the toaster oven for about 30 min. Let chicken breasts cool and then chop into .5" pieces.

  3. Microwave the cauliflower, covered, with a cup of water until tender (about 12 minutes for a bag of frozen). Drain and mash with the potato flakes.

  4. Saute the onion until softened and then add the frozen mixed veggies and the chicken broth. Bring to a boil and then add the snap peas and the broccoli. Let it all steam/cook for about 5 minutes (until broccoli turns bright green).

  5. Spray a casserole pan with cooking spray and then toss in the chicken.

  6. Fold the mashed cauliflower/potato flakes into the veggie mixture.

  7. Mix the soup and milk well. Stir mixture into the vegetables. If you want it thicker, add another 1/4 to 1/2 cup of potato flakes. Doesn't take much!

  8. Pour the soup and vegetable mix over chicken.

  9. Mix the Bisquick and 1 cup of non fat milk together (get rid of most of the lumps) and then pour over the top of the chicken and veggie mixture in a single layer.

  10. Bake for 30-45 minutes. Will be PIPING hot!
