A delicious variation on the traditional cheddar and broccoli soup that lowers the calorie count. To cut even more calories, heavy whipping cream can be substituted with fat free half and half.

Recipe Ingredients for Low Calorie Broccoli Cheddar Soup

1 tbsp country crock light
1/4 cup chopped white onions
1/4 cup chopped celery
1 tbsp flour
1 cup chopped cauliflower
2 cup chopped broccoli
1/2 cup chopped carrots
1/4 cup heavy whipping cream
1 1/2 cup fat free chicken broth
1 cup 2% cheddar cheese

Recipe Directions for Low Calorie Broccoli Cheddar Soup

  1. Spray a skillet heavy with nonstick cooking spray and add 1 tsp of country crock light. Once heated, add chopped onions and celery and saute until vegetables begin softening (about 5 minutes).

  2. Once vegetables have softened add the tablespoon of flour and cook until flour browns. Be careful not to burn the flour.

  3. Slowly add chicken broth (for vegetarian version, use vegetable broth instead of chicken) and stir to keep flour and vegetable mixture from clumping.

  4. Then add heavy whipping cream and stir mixture until it comes to a boil. (You may need to adjust the heat. Add salt and pepper to your taste at this point.)

  5. Using a chopper or food processor, finely chop broccoli, cauliflower, and carrots.

  6. In a crockpot, combine chopped vegetables, broth mixutre, and cheese. Stir and cook on high for one hour then cook on low for four additional hours.
