Low Calorie Asparagus Mushroom Soup

Recipe Ingredients for Low Calorie Asparagus Mushroom Soup

8 oz. fresh asparagus spears
3/4 onion, diced
1 clove garlic, minced
1 T. vegetable oil
4 fl. oz. chicken stock, hot
4 oz. mushrooms, chopped
1/2 tsp. lemon juice
1 salt and pepper, to taste

Recipe Directions for Low Calorie Asparagus Mushroom Soup

  1. Blanch asparagus in boiling water for about 4-5 minutes until crisp tender. Remove with slotted spoon and shock in ice bath. Chop.

  2. Sauté onion in oil until soft, about 5 minutes.

  3. Add mushrooms and sauté until soft, about 4 minutes. Add garlic and sauté for one more minute. Add salt & pepper to taste.

  4. Put asparagus and onion mixture in a blender and purée with chicken stock until smooth. Adjust seasonings and thin with water as necessary. When ready to serve, reheat in small saucepan until hot.
