Recipe Ingredients for Low-Cal Wilted Cucumber Salad

1 cucumber
2 teaspoons salt
2 tablespoons canned consomme
1 tablespoon red wine vinegar
1 teaspoon honey
1 teaspoon light olive oil
1/2 teaspoon black pepper

Recipe Directions for Low-Cal Wilted Cucumber Salad

  1. 1) Peel the cucumber and seed by slicing it in half the long way and removing the seed core with a teaspoon. Slice the cucumber very thinly by by hand or in a food processor, and place it in a sieve or colander. Sprinkle salt over it and let it drain 20-30 minutes over a bowl or in a sink. This removes excess water from the vegetable.

  2. 2) Rinse the cucumber repeatedly. Taste it to be sure the salt is removed. Press cucumber to help remove the water. Drain it on an absorbent towel.

  3. 3) In a small saucepan, combine the consomme, vinegar, honey and oil. Reduce the liquid over high heat until 2 tablespoons are left. Pour it over the drained cucumber, season with pepper, and chill until serving time.
