Recipe Ingredients for low-cal version* Cheese Potato Fluff

12 Russet potatoes, peeled and cubed
8 oz. shredded cheddar cheese
1 1/4 c. 1% milk
1/3 c. I Can't Believe It's Not Butter
2 egg whites

Recipe Directions for low-cal version* Cheese Potato Fluff

  1. Preheat oven to 350 degrees. Spray a 13x9 baking dish with nonfat nonstick spray.

  2. Place potatoes in a large sauce pan; cover with water. Boil until potatoes are cooked. Drain, return to pan, and mash.

  3. Add 1 3/4 c. shredded cheddar cheese, milk, ICBINB. ( I sprinkle in a little Mrs. Dash-- it has no calories!)

  4. Stir over low heat until cheese is melted and well blended.

  5. Remove from heat and fold in egg whites.

  6. Spread into prepared dish.

  7. Bake uncovered for 25 - 30 minutes. Sprinkle with remaining cheese. Return to oven and bake for 5 minutes longer or until golden brown.
