Recipe Ingredients for Low-Cal Spinach Cheddar Quiche

1 1/8 cup egg substitute
2 eggs, whisked
1 tbsp. fat free sour cream
1/2 tsp. salt
1/2 tsp. black pepper
1/4 cup cheddar, shredded
4 cups spinach, chopped
1/4 cup yellow onion, finely diced
1/4 cup bell pepper, finely diced

Recipe Directions for Low-Cal Spinach Cheddar Quiche

  1. Whisk two medium eggs and add to egg substitute. Whisk until bubbles form.

  2. Whisk in fat-free sour cream, salt & pepper.

  3. Mix cheddar into egg mixture.

  4. In seperate bowl, toss spinach, onion and bell pepper together.

  5. Fold into egg mixture, coating evenly.

  6. Pour into 8x8 baking pan.

  7. Bake at 350 for 25-30 minutes, or until center is set.
