Recipe Ingredients for Low cal snickerdool'esk cookies

9 oz zuchinni
1/2 cup fiber one cereal
1/2 cup old fashioned oats
4 oz baby carrots
1/8 cup No Calorie Sweetener
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking powder
3 egg whites
1/4 cup whole wheat flour

Recipe Directions for Low cal snickerdool'esk cookies

  1. 1) get a 9 inch long zuchinni, cut ends and peel. Should then weigh about 9 oz.

  2. pulverize in a food processor and place in cheese cloth.

  3. Wring out pulp from zuchinni until all juice is strained and pulp feels dry. Should yeild about 1 cup of pulp.

  4. Add to a bowl.

  5. 2) do the same process with 14 baby carrots and you should yield about 3/4 cup pulp.

  6. Add to bowl.

  7. 3) in processor break down cereal and oats, and add to bowl.

  8. 4) add sweetener and spices and mix well.

  9. 5) add baking powder and baking soda, egg whites and mix.

  10. 6) add flour.

  11. 7) drop onto a parchment line baking sheet and bake in a 375 degree oven for 15-20 minutes
