Crustless quice that is very low cal

Recipe Ingredients for Low cal Quiche

3/4 cup 2% fat evaporated milk
3/4 cup 2% milk
3 egg whites
3 eggs
1 cup shredded mozzarella cheese
19 g bacon
1 zucchini
1/2 onion
1/2 cup mushroom
2 tbsp olive oil
2 tsp corn starch
1 tsp salt

Recipe Directions for Low cal Quiche

  1. sautee bacon, put aside

  2. sautee minced onions and shredded zucchini in pan

  3. cool

  4. whisk eggs, milk, evaporated milk, cornstarch, salt and pepper

  5. mix cooled sauteed stuff with cheese

  6. assemble in muffin tins

  7. poor wet over

  8. bake in 425F oven until browned and center is set
