A new low cal Pumpkin/zucchini bread, taking out as much of the "bad stuff" as I could.

Recipe Ingredients for Low cal Pumpkin/zucchini bread

1/4 cup splenda
1/4 cup sugar
1/4 cup egg beaters
1/2 cup all purpose flour
1 cup whole wheat flour
1 tbsp. vanilla extract
1/3 cup canned pumpkin
1/2 cup unsweetened applesauce
1 1/2 cups zucchini (grated)
1/4 tsp. salt
1/8 tsp. baking soda
2 tsp. baking powder
1 tbsp. cinnamon
1/4 tsp. nutmeg

Recipe Directions for Low cal Pumpkin/zucchini bread

  1. Preheat oven to 350 degrees

  2. Add the dry ingredients to a large bowl and mix well (sugar, flour, salt, baking soda, baking powder, cinnamon, and nutmeg).

  3. Shred and drain Zucchini

  4. Combine the liquid ingredients in a small bowl and stir well (egg, pumpkin, unsweetened applesauce, zucchini).

  5. Pour the wet mix into the bowl with the flour mixture and mix.

  6. Spray a 9-inch loaf pan or a 12-cup muffin tin with cooking spray and add the batter.

  7. Bake for about 25-30 minutes, or until a toothpick inserted in the middle of the loaf or muffins comes out clean.
