So easy you don't have to save them for the holidays. Make a great breakfast treat (better for you than toaster pastries!!), dessert or just any time you want a snack.

Recipe Ingredients for Low Cal Pumpkin Bars

1/2 c corn oil
1/2 c water
96 tsp Splenda
2 c canned pumpkin
1 c egg substitute
2 c flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tbs cinnamon

Recipe Directions for Low Cal Pumpkin Bars

  1. Preheat Oven to 350

  2. Mix oil and water together and beat hard until they are mixed (remember oil and water don't mix! Don't believe it!!)

  3. Mix oil & water mixture, Splenda, pumpkin and egg substitute togther til well blended. Combine flour, baking powder, sodasalt and cinnamon together in a sifter.

  4. Sift mixture into pumpkin mixture.

  5. Blend well

  6. Spray 9x13 pan with zero cal and zero fat cooking spray

  7. Pour mixture into prepared pan

  8. Bake at 350 for 25 min or until knife blade inserted comes out clean

  9. Cut into 24 rectangles

  10. Serve

  11. Enjoy
