Only one ingredient missing that wouldn't register was 2 tablespoon of worcesterchire sauce. This is great served on a big salad or wild rice. Sometimes nice to add pureed tomatoes on the top too...depends on what you feel like that day.

Recipe Ingredients for Low Cal Meatloaf

2 teaspoons vegetable oil
1 cup finely chopped mushrooms
1 onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped
1 pound of lean ground beef
1/2 cup quick cooking oats
1 large egg
1 cup of diced tomatoes
2 tablespoons of soya sauce
3 garlic cloves
1 teaspoon of rosemary
1 teaspoon of thyme
1 teaspoon of sage
1/2 teaspoon cayenne
1 teaspoon of paprika

Recipe Directions for Low Cal Meatloaf

  1. Preheat oven 350 degrees, and grease loaf pan with non stick spray.

  2. In a large skillet heat vegtable oil. Sauté the mushrooms, onion, garlic, carrot, and celery until softened, about 5 minutes.

  3. In a large bowl, combine the sautéed veggies, beef, oats, egg, diced tomatoes (canned with juice is fine) worcestershire sauce, rosemary, sage, thyme, cayenne, and paprika. Salt and pepper to taste.

  4. Shape into a loaf pan. Bake 30 minutes.

  5. Top with other half can of diced tomatoes on top and bake for another 30-40 minutes longer.

  6. Cut into 8 slices.
