Healthy & delish basic lentil soup. For more flavor varieties, try adding: -cumin and crushed red pepper flakes, -1 can diced tomatoes and dried italian seasoning -a hamhock and bayleaf or any other flavors you enjoy.

Recipe Ingredients for Low Cal Lentil Soup

1 lb dry lentils
6 cups vegetable broth
8 cups water
2 c celery, diced
2 c onion, diced
1 c carrots, diced
3 c broccoli, diced
3 c cauliflower, diced
2 tbsp lemon juice
1 tsp black pepper
1/2 tsp ground sage

Recipe Directions for Low Cal Lentil Soup

  1. Rinse lentils. Place in large pot with broth and bring to a boil. Add celery, onion & carrots. Simmer over medium low.

  2. In a separate pot, place water, broccoli and cauliflower. Bring to a boil. Boil uncovered for 10-15 minutes or until very tender. Remove from heat and puree mixture in blender until smooth. After it is pureed, add it to the pot with the lentils & other ingredients.

  3. Add lemon juice, salt, pepper and sage to same pot. Stir all ingredients well.

  4. Simmer on medium low for 45 minutes to 1 hour, or until lentils reach your desired level of tenderness.

  5. Enjoy. Makes approximately 16 - 1c servings.
