You still get the yummy crispiness with all the calories by first coating the pork with dijon mustard then panko instead of extra flour and egg wash. Plus the dijon adds an amazing flavor and I'm not even a normal mustard lover! :)

Recipe Ingredients for Low-Cal Herb Crusted Pork Tenderloin

6 oz Pork, Fresh, Loin, Tenderloin
1/2 cup Panko
1 tablespoon Sage
1 tablespoon Rosemary
4 tsp Classic Dijon Mustard
1 serving Extra Virgin Olive Oil

Recipe Directions for Low-Cal Herb Crusted Pork Tenderloin

  1. Slice tenderloin into 4 slices about a 1/2 in. think then pound out until 1/4 in. thick. Season with salt and pepper.

  2. Coat each peice with 1 tsp of dijon mustard.

  3. Blend panko with herbs, a pinch of salt and pepper, and red pepper flakes in food processor until well blended and panko size in reduced.

  4. Dredge pork in panko mixture.

  5. Heat oil over med-high heat.

  6. Cook for 1-2 minutes on each side. They cook VERY quickly so watch closely!
