2 tbsp apple butter
1 cup unsweetened applesauce
3/4 cup eggs
1/2 cup Splenda
1/2 cup brown sugar
2 tsp vanilla
2 cups flour
1 tsp baking soda
1 tsp baking powder
3 tsp cinnamon (add to taste)
3 cups grated carrots
4 oz fat-free cream cheese
4 oz Whiped Topping Free
1/2 tsp vanilla extract

Recipe Directions for Low-Cal Fat-Free Carrot Cake with Fat-Free Cream Cheese Frosting

  1. For Cake:

  2. Preheat oven to 350 degrees.

  3. Coat muffin pan with non-fat cooking spray.

  4. Combine apple butter, applesauce, eggs, sugar, and 2 tsp vanilla until smooth.

  5. Slowly add flour, baking soda, baking powder, and cinnamon to the mix.

  6. Blend until all ingredients are moistened.

  7. Lightly mix in grated carrots.

  8. Pour into muffin pan.

  9. Bake in oven for 35-40 minutes.

  10. Let them cool before adding frosting!

  11. For Frosting:

  12. Blend cram cheese, cool whip, and 1/2 tsp vanilla extract.
