Tastes great! Didn't use any muffin liners and it doesn't stick with the cooking spray.

Recipe Ingredients for Low Cal/Fat Banana Muffins

1 large Egg, Whole
63 grams Naturegg Simply Egg Whites
5 serving president's choice greek yogurt 0%mf
3 tbsp Original Spread
3 medium (7" to 7-7/8" long) Bananas
1 tsp Vanilla Extract
0.25 tsp Salt, Table
1 tsp Baking Soda
1 tsp Baking Powder
150 grams SPLENDA No Calorie
1 cup Flour, All Purpose
0.5 cup Flour, All Purpose
2 serving No Name Whole Wheat Flour

Recipe Directions for Low Cal/Fat Banana Muffins

  1. Preheat oven to 350 degrees. Generously grease a 9" loaf pan OR a 12 muffin pan, with cooking spray.

  2. In a large bowl, combine flour, 1/2 the sugar, baking powder, baking soda and salt. Set aside.

  3. In a medium bowl, mash bananas and mix in vanilla and yogurt. Set aside. (Sorry guys, you'll need a total of three bowls for this. It's worth it!).

  4. With your stand mixer or in yet another bowl, beat together remaining sugar and softened butter for about 3 minutes until "light and fluffy". Add egg and substitute. Mix.

  5. Turn the mixer to low and add a third of the banana mixture. Let mix until just combined. Add half of the dry ingredients. Continue alternating until all the ingredients are combined. Try not to over-mix.

  6. Pour batter into prepared loaf OR muffin pan and bake for about 50-55 minutes for loaf and 20-25 minutes for muffins... or until a skewer comes out clean.
