Recipe Ingredients for Low cal Eggplant parmesan

1 cup (1" cubes) Eggplant
1 serving Diced Tomatoes with Basil Garlic and Oregano
1 serving Mozzarella Fat Free
1 tablespoon Smart Menu Shredded Parmesan Natural Cheese
0.25 tbsp Oil Olive Extra Virgin
1 serving Bread Crumbs Italian Style
1 serving Tomato Sauce

Recipe Directions for Low cal Eggplant parmesan

  1. pre heat oven to 400

  2. peel eggplant and cut into 1/4

  3. " slices. boil slices in un salted water for 5 min., pat dry with paper towles. lighly oil the slices and place on cookie sheet. brown on each side, aprox 10 - 15 min each side. while browning eggplant create sauce one can each of diced italian tomatos and one can tomatoe sauce one table spoon italian seasoning 1/4 tsp salt and pepper 1 tbl spoon garlic minced. bring to a simmer. Once egg plant is browned spoon a layer of sauce into bottom of a glass 9x9 pan place a overlapped layer of eggplant lightly spread some bread crumbs and the fat free mozzerela. continue to layer untill all egg plant is gone. on the top layer add in the shredded parmesean. Bake at 400 for the first 20 minutes than at 350 untill bubbling.
