Quick and easy low cal chopped Nicoise salad.

Recipe Ingredients for Low Cal Chopped Nicoise Salad

1 head lettuce, chopped
3 small red potatoes, cubed
1/4 red onion, diced
1/4 cup black olives, chopped
1/2 cup green beans, chopped
1 can tuna, light in water
1/4 cup lemon juice
2 teaspoons extra virgin olive oil
1/8 teaspoon dijon mustard

Recipe Directions for Low Cal Chopped Nicoise Salad

  1. Steam potatoes until tender, approximately 10-13 minutes. Add fresh green beans last 4-5 minutes to steam also.

  2. Remove and immediately add to iced water to chill and stop cooking.

  3. Drain tuna and add to mixing bowl.

  4. Chop all vegetable ingredients and add to mixing bowl with tuna.

  5. Mix dressing. Add lemon juice, olive oil and mustard together in small mixing bowl. Whisk together until ingredients are well blended.

  6. Add dressing to mixed vegetables and tuna. Toss thoroughly. Serves 4.

  7. note: leftovers go great with a wrap next day for chopped nicoise salad wraps!!
