Recipe Ingredients for Low Cal Chicken Salad

3 cups diced chicken breast
1/2 cup celery
2 small sweet pickles
1/3 cup fat free mayo
1 large green onion

Recipe Directions for Low Cal Chicken Salad

Mince the sweet pickles or use pickle relish. Dice your celery and onion. Mix ingredients together and add salt and pepper to taste. Add a chopped hard boiled egg for a richer taste, but that adds cholesterol and calories. Add a dash of curry to add a pleasant flavor. Go one step further and add a handful of seedless grapes halved and a 1/4 cup chopped walnuts. Serve on a croissant for a lovely lunch.
