Great for dieters who hate diet food! Some fresh spinach and black beans on the side makes for a very filling meal!

Recipe Ingredients for Low-cal Chicken Enchiladas

8 oz fat free cream cheese
12 oz chunk chicken
1 tsp cumin
1/2 c black olives, sliced
3/4 c tomatoes, chopped
1 c salsa
1/4 c cheddar cheese, finely shredded
3 flour tortillas

Recipe Directions for Low-cal Chicken Enchiladas

  1. Mix cumin and cream cheese till smooth. Add chicken, 1/4 c olives, 1/4 c tomatoes, and 1/4 c salsa.

  2. Distribute mixture equally onto tortillas, and roll. Place into a lightly greased baking dish. (PAM is great, or use a little of the salsa on the bottom to keep the tortillas from sticking.)

  3. Top with remaining salsa, olives and tomatoes. Sprinkle cheese on top.

  4. Bake at 350 for 30 minutes.
