Recipe Ingredients for Low-Cal Bran Muffins

1 cup wheat bran
1 1/2 cups mashed banana or unsweetened applesauce
1/4 cup skim milk
1 cup whole wheat flour
1/2 cup oat bran
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 cup Splenda no-calorie granulated
1 teaspoon vanilla
2 egg whites
1/4 cup raisins

Recipe Directions for Low-Cal Bran Muffins

  1. Preheat the oven to 400F.

  2. Spray 12-cup muffin pan with cooking spray or insert paper liners.

  3. Combine dry ingredients in large bowl.

  4. Combine bananas, milk, vanilla and egg whites in another bowl, then add all at once to dry mixture and stir until combined.

  5. Fold in raisins.

  6. Spoon the batter into the pans and bake for 15-17 minutes.
