Recipe Ingredients for Lourdes' Turkey kielbasa and lentil soup

1 tablespoon olive oil
1 lb carrots, thinly sliced
2 cups onions, diced
8 garlic cloves
14 ounces turkey kielbasa, cubed
2 1/2 cups lentils, rinsed
10 cups water
28 1/2 oz diced tomatoes
1/2 teaspoon black pepper
1 teaspoon kosher salt
8 oz diced green chilies
1 tablespoon hot sauce

Recipe Directions for Lourdes' Turkey kielbasa and lentil soup

  1. Heat olive oil in a large pot on medium heat. Add onions and carrots, stirring frequently until softened, about 5 minutes. Add garlic and saute until garlic is browned.

  2. Add the kielbasa, lentils and water; bring to a boil. Reduce heat and simmer until the lentils are tender; about 30 minutes.

  3. Stir in the tomatoes, green chilies, hot sauce, salt and pepper. Simmer until heated through, about 5 minutes longer.
