A traditional pot roast made with carrots, onions, celery and balsamic vinegar on the stove. I use montreal steak seasoning.

Recipe Ingredients for Lourdes' Stovetop Yankee Pot Roast

2 tablespoons olive oil
1/4 cup all purpose flour
3 lbs. beef chuck roast
2 cups onions, sliced
4 large carrots, sliced
2 lbs. potatoes, quartered
2 cups celery, diced
4 tablespoons garlic, minced
1 tablespoon steak seasoning
1/4 cup balsamic vinegar
24 ounces beef broth
4 cups green beans, cut
1 tablespoon sage, chopped

Recipe Directions for Lourdes' Stovetop Yankee Pot Roast

  1. Heat oil in a heavy duty pot over medium heat.

  2. Dredge the roast in some flour, shake off the excess and brown in the hot oil on all sides. Stir in the onions, carrots, celery, garlic and cook until lightly browned. Pour in the balsamic and bring to a simmer before pouring in the beef broth. Reduce heat to low, cover and cook until the beef is tender, about 2 to 3 hours.

  3. When the meat has finished cooking, remove to a cutting board and allow to rest for 10 minutes. Add the green beans, use frozen if not in season. While beef is resting, thicken the cooking liquid with the cornstarch. Slice the beef and serve with the gravy.
