Pumpkin muffins with whole wheat flour, applesauce and splenda for us diabetics. Make these ahead of time, keep in fridge and microwave 10 seconds for breakfast or a low carb treat.

Recipe Ingredients for Lourdes' Pumpkin white chocolate chip muffins

2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 cup applesauce
1/2 cup splenda brown sugar
1/3 cup splenda
3 eggs
1 teaspoon vanilla
1 1/2 cups canned pumpkin
1/2 cup white chocolate chips

Recipe Directions for Lourdes' Pumpkin white chocolate chip muffins

  1. Preheat oven to 375 degrees F and grease muffin tins or line with paper liners.

  2. In a medium bowl, whisk together flour, baking soda, baking powder and spices.

  3. In a large bowl beat applesauce, splenda brown sugar and splenda until well combined. Add vanilla and then the eggs one at a time. Mix in pumpkin puree and white chocolate chips.

  4. Mix in dry ingredients just until moistenned.

  5. Evenly distribute batter into muffin cups about half full. I usually two heaping tablespoons per muffin, then go back and check to see which muffin needs more if I have any leftover batter. Use a rubber scraper to get every bit of batter from your bowl.

  6. Bake for 15 minutes or until the tester comes out clean.Let rest for 5 minutes in pan, then continue cooling on wire racks to keep from getting hard and rubbery.
