Lowfat and wholesome muffins for a great start to your day. (pecans are also good in this but I leave them out when making for my sister-in-law who is allergic to nuts)

Recipe Ingredients for Lourdes' Morning Glory Muffins

1/2 cup raisins
2 cups whole wheat flour
1/2 cup splenda brown sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1 cups carrots, peeled and grated
1 cup apple, peeled, cored and grated
1/2 cup sweetened coconut
1/2 cup pecans, chopped
3 eggs
1 cup applesauce
1/4 cup orange juice
2 teaspoons vanilla

Recipe Directions for Lourdes' Morning Glory Muffins

  1. Preheat oven to 350 degrees. Lightly grease two muffin pans or line with papers and coat with nonstick spray.

  2. Put the raisins in a small bowl and cover them with hot water; set aside to soak while you assemble the rest of the recipe.

  3. Whisk together the flour, splenda, baking soda, and spices in a large mixing bowl. Sitr in the carrots, apple, coconut and pecans.

  4. In a separate bowl, beat together the eggs, applesauce, orange juice and vanilla. Add to the flour mixture and stir until just moistened. Drain the raisins and stir them in.

  5. Scoop the batter about half full into each muffin tin, about 2 heaping tablespoons.

  6. Bake 10 to 13 mins or until cake tester comes out clean.

  7. Cool in pans for 5 minutes and then turn out on wire racks to finish cooling.
