A cross between a whole wheat dinner roll and cornbread. Yummy with a smidge of I can't believe it's not butter light!

Recipe Ingredients for Lourdes' cornbread muffins

1 1/2 cups cornmeal
2 1/2 cups fat free milk
2 cups whole wheat flour
1 1/2 tablespoons baking powder
2/3 cup splenda
2 eggs
1 cup unsweetened applesauce

Recipe Directions for Lourdes' cornbread muffins

  1. Mix cornmeal and milk and let sit for 10 minutes in a bowl.

  2. Preheat oven to 400 degrees. Line muffin pans with liners and spray with nonstick spray.

  3. In a large bowl beat in eggs, splenda and applesauce.

  4. In another large bowl whisk together flour, and baking powder. Combine both mixtures, beating until well blended. Pour into muffin cups about half full each.

  5. Bake for 15 to 20 minutes or until toothpick comes out clean. Cool in pan for 5 minutes and then transfer to wire racks to cool completely.
